Teriyaki Tempeh with Lo Mein/Broccoli

So, I finally got around to trying some of the tempeh we bought. I will say, I was a little freaked out when I first opened it. It looked like something out of a horror film. The end result was amazing though. I will definitely be making this and other variations again! I bought this particular brand from Sprouts, but I’m pretty sure you can find this in any store that has a “Health/Organic” section. This tempeh was almost three dollars. Not a bad price, considering the price of meat.

The tempeh comes in a package like this. This one was a white rice tempeh. They have tempeh made with brown rice as well (I have some in my fridge, when I try it, I’ll let you know what the differences are).

Texture wise, its hard to describe. It was firm yet really soft? I’m sure that helps a lot ha. Plain, it has a very nutty flavor to it. I can see how it would easily be transformed into many different dishes. I went ahead and cut quarter inch slices of the tempeh. It was super easy to cut, although some pieces felt apart.

 

After I sliced the tempeh, I put it in a skillet with sesame oil, over medium heat. I cooked it for about 15 mins. Turning the slices over repeatedly until they had a nice golden brown color.

 

After that was finished I poured the teriyaki sauce that I made on top. I let that cook for about 7 mins. It smelled sooooo good. It still looked weird to me (quite possibly like something out of a zombie movie), but I wasn’t going to let that stop me!

After the tempeh soaked up some of the sauce, and the remaining sauce cooked down a little, I added broccoli and noodles. I tossed that around for about 10 mins until the broccoli was cooked and the noodles had an even covering. It was starting to look like a real dish!

Then we tasted it. Andrew said it was delicious. I had to agree. The real test came with Karli. She loved it as well. I was quite proud of myself! I didn’t burn anything and I successfully made my first all vegan meal, from scratch!
